Brown Family Farm Packs a Wallop with Maple Dollop!

Newest Maple Culinary Delight From the Farm; A Little Dollop'll Do Ya

Brattleboro, VT (January 12, 2008) - Brown Family Farm recently created Maple Dollops and Maple Mustards, the newest culinary delights showcasing maple’s savory and sweet sides.

According to Merriam-Webster's, a dollop is a small lump, portion, or amount. At Brown Family Farm, Maple Dollop is farm-fresh fruit and pure New England Maple, all gussied up. Brown Family Farm Maple Dollops come in three varieties: Maple Apple, Maple Blueberry, and Maple Cranberry. Like all Brown Family Farm products, Maple Dollops are 100% natural and contain no preservatives. Dollops may be served over ice cream, waffles, yogurt, oatmeal, bagels, crêpes, toast, and pound cake. They also can be used in a demiglace or on a roast for a savory and sweet touch.

"Pure New England maple has been a way of life for our family since 1840," said Arnold Coombs, general manager of Brown Family Farm. "It’s the secret ingredient in all of our culinary delights. Our new maple dollops are fun and just a little bit quirky. They can be used in variety of ways—sweet or savory, classic or innovative."

According to the New York Times, Brown Family Farm "has something different to wake up your pancakes or waffles on a cold morning: Maple Apple Dollop, a syrup with tender little pieces of apple mixed in."

Brown Family Farm creates a wide variety of other maple culinary delights, such as award-winning crêpes and pancake mixes, innovative grilling and roasting sauces, nostalgic maple candy and, of course, three different grades of pure New England maple syrup.

Brown Family Farm has also recently launched its maple mustards: Vermont Maple Mustard and Horseradish Maple Mustard. Vermont Maple Mustard is coarse mustard blended with smooth, pure maple for a multi-tasking mustard with style. Horseradish Maple Mustard features mellow maple matched with kicky horseradish for personality. Both mustards are highly versatile and delicious as a sandwich spread, dipping sauce, glaze or marinade, and on everything from hot dogs and pastrami to beef tenderloin and ham.

Working exclusively with independent New England farmers and chefs, Brown Family Farm uses only pure New England maple prepared in small batches. Pure maple is graded based on three criteria: color, flavor, and density. Contrary to popular belief, USDA syrup grades do not indicate a difference in quality, but rather, the stronger and richer the flavor. Like fine wine, it’s important to choose grades based on what you’re “pairing” the syrup with and what your palate prefers.
